I reuse the boxes multiple times!

First, they become a favorite perch for my roommate's cat. She loves, loves, loves sitting on the boxes & rubbing her whiskers on the corners.

Then, I store random things in them -- all the objects which accumulate on tables & counters & can't really go away in the basement but need to get out of sight for a few days.

Finally, I either use them as boxes for mailing out presents and/or care packages, or turn them into permanent storage boxes (I have all my holiday cards in one -- I just keep buying more cards every January -- they never expire).

Thanks for pointing me to the recipe, maverick -- I'll have to try it. I mostly stay away from baking cakes after going through a phase where I baked a new cake every week. That... wasn't such a good idea.

it's a chocolate cake with butter cream frosting. it's a very easy recipe, and works well for cupcakes, a double layer cake, or one big cake (which is what we had here). what takes time (at least for me) is frosting a design like this.

darcy, the recipe is on page 99 of the green way cookbook.

if anyone else would like the recipe, i'm happy to share it.

maybe i can make these as cupcakes for the next tom bihn fest? they're not vegan - they contain dairy (but no eggs). and we can leave out the food coloring for the frosting.

otherwise, i also have a recipe for a very yummy vegan carrot cake.

by the way, last year, we did a lightning mcqueen cake from the movie cars, and the year before that we did a train engine cake. what takes time with these cakes is decorating them. each year, after it's all over, i tell myself that next year, we're going to do a rectangular or round cake that doesn't take 3 hours to decorate. and each year, i find myself decorating another cake like this. i'm running out of room in my kitchen with all of these cake pans piling up. so we're building a new home that has a bigger kitchen so that we can store all the cake pans we've accumulated and the ones that we'll get in years to come!

what do you do with your tom bihn boxes?

my son had his birthday party today, and i needed something on which to place the cake. so i cut out the lid from a tom bihn box and wrapped it in aluminum foil and put the cake on that. worked out very nicely!
